INGREDIENTS
  • 3 cups peeled & cubed Russet potatoes
  • 1 lb smoked sausage
  • 4 tbsp butter
  • 4 tbsp flour
  • 2 cups half & half
  • salt & pepper
  • 1/2 lb Velveeta cheese cubed
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 tsp smoked paprika
INSTRUCTIONS
  1. Heat a large skillet over medium-low heat.
  2. Sauté the sausage in 1–2 tablespoons of olive oil and turn/stir until slightly browned.
  3. Prepare a 9x13-inch baking dish by lightly coating it with nonstick spray.
  4. Transfer the cooked potatoes and sausage into the dish and stir evenly.
  5. Increase the heat to medium and melt the butter in the skillet.
  6. Whisk in the flour and cook for about a minute to eliminate the flour taste.
  7. Gradually add the half-and-half and whisk constantly until fully blended.
  8. Keep cooking until the mixture thickens.
  9. Add the Velveeta and paprika to the skillet and stir occasionally until the cheese has melted completely and the sauce is smooth.
  10. Add salt and pepper for taste.
  11. Evenly pour the cheese sauce over the potatoes and sausage.
  12. Top with an even layer of shredded cheese.
  13. Bake at 350°F for 35–45 minutes or until the casserole is golden brown on top.
