If you've ventured to Downtown Denver's Civic Park lately, you've likely passed the unique-looking building at 240 14th Street. The new hotel—the Populus Hotel—is designed to emulate Colorado's aspen trees. Reservations are already being taken for dates beginning in September.
Now, we're learning that the new hotel will have two new restaurants, one with a rooftop bar. Hotel operator Aparium revealed the names behind the restaurant concepts: Pasque and Stellar Jay.
Executive chef Ian Wortham, who worked for Michelin-starred Frasca Food & Wine in Boulder, will lead both kitchens.
"Through a collaborative effort we ended up on this idea of two concepts with nature-based cuisine," Wortham said. "We want to show a reverence for nature through our food since it’s truly a symbol of human’s first interaction with nature."
The Populus Hotel was developed by Urban Villages, which is calling it the nation's first "carbon-positive" hotel. Urban Villages used recycled materials, low-carbon concrete mixes, and other techniques to reduce its environmental footprint. In addition, 72,000 trees were planted in Gunnison County last summer to offset the carbon emissions from the hotel's construction.
Pasque will have a vegetable-forward menu while Stellar Jay will have a menu of wood-fired shareable plates.
